SUBJECT: Recipe's for Salmon

Submitted by Rancher (199.170.89.47) from TEXAS on

I received a large package of Salmon from my neighbors friends from Alaska a few days ago. I would like to try grilling but not sure about the best way to prepare and cook this type of fish. Any help would be appreciated. Thanks.

I like BBQed salmon. I will marinate in Kikomann (sp?) teriyaki sauce for a day or two. Remove from the marinade, put the salmon in a basket made for BBQing fish/small things, the basket doesn't have to be fish shaped, mine is square. Put over hot coals (on top of the BBQ's grill) and grill for ~5 minutes per inch. If you don't use a basket, some of the salmon will stick to the grill.

Cover the BBQ when cooking the salmon, salmon have a lot of fish oil (good for you; Omega-3) and the oil will burn/flare if the bbq is not covered.

Another way: wrap in double layer of foil, put a few lemon slices and dill sprigs on top of the fish, add a little white wine, wrap up (seal), place on grill, cook for ~15 minutes.

    Salmon and Asparagus for dinner.

I have used a Lite Kikoman sauce to marinate chicken and steak. I would think the teriyaki sauce would compliment the Salmon. Great recipe. We will try it. Thanks again.

P.S. I let these Alaskan guys hunt turkey for free on our ranch. They come down every year so this will be a yearly treat. We have a nice package of Salmon and Halibut.

Try this one. Cut filets into chunks grilling size. Dip one side into a 50/50 mixture of melted butter and maple syrup, then dip that same side into a 50/50 mixture of cracked peppercorns and flour. Grill with pepper side up on gas grill, then put into oven to broil and crisp the top pepper layer. Its hot and spicy and sweet, and a nice change from the usual. Kinda like a pepper steak, but healthier.
