Rog (199.46.199.231) from TEXAS says We fish out of our boat down there as well.
You can launch in east pass on the east (Destin) side north of the bridge. I can not remember the name of the marina (East Pass Marina??? maybe). Nothing fancy but your right in the pass when you launch so it will cut down on your travel time if you run offshore. They also have a courtesy box that you can use if you launch in the mornings before they get there. It's just north of the construction for the new condo (I think thats what it will be) they are building just north of the bridge. We always fish offshore. Get up around daylight and get out in the pass and catch some bait using sabiki rigs. Then get to some numbers offshore. Here is a site with some public numbers you can usually catch something on.

A lot of the coordinates are good. We found the Thomas Hayward Liberty ship (8-9mile out of the pass)and caught some real nice keeper snaps, one AJ, and had four huge cobia at the boat that would not bite. On that trip we also jumped two bull dolphin off a weed line about 20 miles out and off course caught a few kings. That was in June, water real green due to the rain then. Last year in the liberty ship area we caught a bunch of Dolphin and more kings than I care to catch. We also found the Deborah and Angelina listed on that page. In addition to fishing the wrecks look for the rips and good weeds lines.
Also look at this site for reports:

I have never fished in the bay but they say over the grass beds is good for trout early on top waters such as top dog jrs. I have caught my biggest bull red ever in the pass off the jetties est 20-30lbs. I caught him on a silver jerk bait and bass rod standing on the rocks. Cool thing was I had three following the stick bait back to the rocks and he took it with about 20 yards off line out right at the rocks while I watched. They also catch reds around the bridge where the water runs off the shallow flat(crab island) into the channel.
Good luck....I love it down there. If the weather is right and the rain stays away you will catch some fish....
