I just bought a pressure cooker. Would like any information and or recipes on how to properly can tuna with a pressure cooker. Any advice will be appreciated. Thanks

    I've read that the commercial outfits seal it in the can before they cook it. It's cooked in pressure cookers to keep the cans from swelling or bursting.

    My buddy in California uses the baking method at http://www.culinarycafe.com/Canning/Canning_Tuna.html. Last night we had tuna and noodles made with his tuna, yummy. One thing I will mention is your house will reek while you're baking the fish so if you have a stove in the garage it's better.

    I was reading an article about canning tuna by Tred Barta in Sport Fishing Magazine. It has been awhile but you could probably get it on the internet from them. It went into it pretty deep.
