what species is the fish most Gulf fishermen call a white snapper? I think it must be some kind of porgy.

    over here around the Galveston Bay complex of the upper Texas coast, many ole salts refer to the sheephead as either a "Bay Snapper" or "Gridleak Snapper."

Around Port Aransas, I've heard the name "white snapper" used occasionally and more often, "gray snapper" (both usually preceded by the "f--" adjective), when the triggerfish are so thick that you can't get a baited rig all the way to the bottom to catch red snapper. If you go to this site http://www.fishbase.org/Summary/SpeciesSummary.php?id=1225 for whitebone porgy and look at the enlarged map of relative likelihood of occurrence, you'll see that drop-off in the LA-MS-AL area which makes me guess that in your area, it's more likely to mean gray snapper.
